Ingredients
•180g unsalted butter
•1/2 cup water
•3/4 cup cocoa, sifted
•1 1/2 cups caster sugar
•3 eggs
•2 tsp vanilla extract
•1/2 cup plain flour, sifted
•3/4 cup self-raising flour, sifted
•ure icing sugar, sifted,
•for dusting
Method
1 Preheat oven to 180°C. Line base and sides of a 20cm-square, deep cake tin with baking paper. Combine butter, water and cocoa in a medium heavy-based pan over a low heat. Cook, stirring, until butter has melted and mixture is smooth. Remove from heat and stand until lukewarm.
2 Put sugar, eggs and vanilla in a bowl and beat with electric beaters until mixture is pale and thick. Add cocoa mixture to egg mixture, then add flours and stir until smooth. Pour into prepared tin and bake for 25-30 minutes or until a skewer inserted in centre comes out clean. Cool in tin.
3 Lift brownie from tin using baking paper, and cut into 16 squares. Dust with icing sugar just before serving. |
