[澳洲英语] Naughtybaby私人珍藏(二)——公布澳洲特色食品处方

打从登陆澳洲起,我这个自诩的“美食家”便开始挖掘澳洲的特色小吃。不管是旅游还是常驻,“入乡随俗吃个遍”,一直是本美食家的宗旨
下面就开始,向各位TX介绍澳洲特有的食物文化,当然,对于各位美食家,美厨娘(如大白兔 )来说,本帖里的recipe都是非常值得一试伸手滴~!闲话不说,切入正题(of cuz, English is a necessity here LOL):

In general, traditional Australian recipes originated in Great Britain and were
adapted over the years to fit the Aussie way of life. Bush tucker, on the other
hand, are recipes created using Australian bush foods.

While some foods may sound familiar to Americans, they're often served quite differently. Most Aussies order their hamburger with a fried egg and bacon along with the standard beetroot (beets). (naughtybaby注:这是澳洲汉堡区别于其他各式汉堡的精髓所在!)and the buns are always buttered before tomato sauce (ketchup) is added. Yes, we love beetroot on our sandwiches. Pumpkin isn't for carving Jack-O-Lanterns as you do in the USA for Halloween. It's a regularly eaten vegetable here, baked and served with a main dish or mashed and mixed with potatoes.

An Aussie favourite is a meat pie or a sausage roll with tomato sauce on top. It's eaten like a sandwich, not with fork and knife.







在各种澳洲特色食物中,本人最情有独钟的,就是ANZAC biscuits。Coles,woolworths里都有卖,像我这样“挑剔的甜牙”是免不了扫荡和比较口味滴 。不同牌子的ANZAC饼干口味略有差异,个人推荐Arnott's公司的。(me居然做广告,他们应该给我bonus下面,我就贴出这款具有浓厚历史文化气息的部队饼干配方:

Ingredients

butter (4 ounces)
golden syrup
carbonate of soda (baking soda)
boiling water
plain flour
salt
coconut
sugar
rolled oats

Method
  • Preheat oven to 160°C (325° F)
  • Combine butter and golden syrup in a saucepan and stir over a low heat until butter melts.
  • Dissolve the carbonate of soda into the boiling water and add to the butter mixture.
  • Sift the flour with the salt and add the sugar, coconut, and rolled oats.
  • Stir the butter mixture into the dry ingredients until it forms a stiff dough.
  • Drop small lumps of dough onto a lightly greased baking pan. Press down on each with a fork. Make sure you leave room between the biscuits for them to expand.
  • Bake until golden brown, about 18 - 20 minutes.
  • Remove the pan from the oven and let the biscuits rest for a minute or two. Then carefully remove the biscuits to wire racks for cooling.
  • Store in an airtight container. Makes about 36 biscuits.

正好今天早上做了,好巧啊!不过只用上面说的五种材料,包括:
butter
S-R flour
coconut
sugar
rolled oats
味道如何,还待LG起床后评价才知道,呵呵

今天向广大馋友界人士力荐的, 是本人私人珍藏配方中的第二道: Meat Pie, 凡爱好肉食的TX们都可以一试身手!
当然,在享受美食的同时,也要同时兼顾本waitress收集烹制滴澳洲英语大餐哦,   ---(me一贯说,么有读英语,就么吃meat pie )


The humble meat pie is as Australian as it gets. While Americans love their hamburgers, Australians love their meat pies and sausage rolls more. We are the world's biggest consumer of meat pies with over 250 million eaten each year.

The traditional Aussie meat pie is about 15cm in diameter, just large enough to hold in one hand and covered in tomato sauce. The pastry is usually shortcrust (heavy enough so it doesn't fall apart in your hands), and the filling is beef or chicken with enough thick gravy inside to stick it all together.

Meat pies are found in take away shops, bakeries and most everywhere else. You can also buy Four 'n Twenty, Big Ben, Aussie Pies, and Sargents meat pies in the frozen food section of our grocery stores. Today's meat pies come in your basic meat pie and a variety of styles: steak and onion, beef and tomato and onion, beef and vegetables, chicken and vegetables and others.

There are many ways to make a meat pie. Here's one we enjoy.

bacon rashers (slice of bacon), chopped
onion, peeled and finely chopped
water
black pepper

margarine or butter ( 2 ounces)
cold water ( 5 fluid ounces)
commercial puff pastry

Method
Filling
  • Remove any fat and cube the chuck into about 1 cm ( ½" ) pieces.
  • Fry the bacon and onion over a low heat and add the chuck when the onions are slightly soft.
  • Season with salt, pepper and thyme, add the water, cover and simmer for about 1 hour.
  • In a bowl, slowly add a little water to the flour and stir until it forms a smooth, runny mixture.
  • Slowly stir the flour-water mixture into the meat mixture until it thickens. Remove from heat and let it cool.
Pastry
  • In a mixing bowl, add salt to the flour and then cut in the margarine until mixed with the dough.
  • Add water and lemon juice to the dough.
  • Remove the dough and gently knead on a lightly-floured surface.
  • Let the dough rest for about 20 minutes and then roll it out.
The Pie
  • Line the small pie dishes with the pastry and fill with the cooled meat mixture.
  • Moisten the rim of the pies with milk or beaten egg so the tops will stick to it.
  • Place a layer of commercial puff pastry on top of each pie to form a lid and trim away the excess.
  • Press the edges together with a fork to seal.
  • Make a hole in the centre of each pie to allow the steam to escape and glaze the tops with beaten egg or milk.
Bake pies at 180° C ( 375° F) for 15 - 20 minutes or until golden brown on top. Serve hot with tomato sauce on top.
Optional: for a different taste, use 1 teaspoon of soy sauce or 1 teaspoon Worcestershire sauce instead of the thyme and cut the salt in half.
And for something different, try an Aussie pie floater. That's a meat pie served in a bowl of pea soup. Fair dinkum! Try it and you'll see why it's a favourite.

I didn't know it was aussie...the one I tried tasted wired, like a mixture of vegimate&meat soup&flour

不知道 楼主是否吃过 一种 grilled fish fillet 或者grilled octopus.
一般海鲜店 给cooked 估计都有. 放铁板上 grill 然后 +chips 柠檬之类的.
工艺非常简单 .就是不知道他是用什么调料.
如果知道调料 以后 晚饭 就直接做这个了 非常快.
